1. Vanilla cake without eggs
Yes, you can make a cake and you do not have to use eggs! This vanilla cake is delicious! It has a sweet but buttery flavor, and it is light and moist. It is the perfect cake whether you are celebrating a holiday, birthday, or just need a cake because you made it through another week!
2 cups of sugar
1 cup of unsalted butter softened to room temperature
2 teaspoons of pure vanilla extract
4 cups of self-rising flour (or cake flour)
2 cups of whole milk (if you are vegan or have a milk allergy, you can substitute this with any plant milk that you typically use)
2 tablespoons of apple cider vinegar
How to make the cake:
Preheat your oven to 350 degrees F
Grab 3 8-inch round cake pans, and grease the bottom of the pan. Once greased, line the bottom of the pan with parchment paper
Using a large mixing bowl, beat together the sugar and butter until it is creamy, pale, and fluffy in texture (scrape the sides of the bowl with a spatula occasionally to make sure that every part of it is incorporated)
Add your vanilla extract and mix until it is combined
In another small bowl, combine your milk and apple cider vinegar. set that bowl to the side
Taking your flour, alternate adding the flour and the milk to the butter mixture. Making sure to start and end with the flour
Beat all ingredients until it is all just combined- be careful not to over-mix this cake batter, making it too thin
Pour about 1/2 cups of batter into each of your prepared pans
Bake the cakes for about 20-25 minutes or until a skewer/toothpick comes out clean after going through the center of the cake
Remove the cakes from the oven and allow the cake to cool completely
2. Eggless banana bread
Banana bread is a fan favorite and most people will tell you that once you get the best recipe (most often from your mama who always makes the best bread), you should not mess with it. This recipe however, lives up to the mark in taste and ease! It is a sweet and moist bread recipe that is perfect to eat for breakfast, lunch, or just as a sweet treat throughout the day. It is so good that you may be shocked at how fast you can eat an entire loaf!
Ingredients for the bread:
3 bananas that are very ripe
1/2 cup of melted butter
1/2 cup of buttermilk
2 teaspoons of vanilla extract
1 cup of packed brown sugar
1 teaspoon of baking powder
3/4 teaspoons of baking soda
1/4 teaspoon of kosher salt
1 1/2 cups of all purpose flour
1/2 cup of finely chopped walnuts (this is an optional step and can be replaced with chocolate chips, peanuts, raisins, etc)
Ingredients for the glaze:
1 cup of powdered sugar
3 tablespoons of milk
1 teaspoon of vanilla extract
2 tablespoons of finely chopped walnuts (this is, again, an optional step)
How to make the bread:
Preheat the oven to 350 degrees and grease a bread loaf pan very well
Grab a medium sized bowl, and mash your (very ripe) bananas with a fork until it is totally smooth.
Once smooth, stir in the melted butter and mix well until it is combined
Start to add in your buttermilk, vanilla extract, and sugar. Mix until it is combined.
Mix in the baking powder, baking soda, and salt. Mix until all ingredients are combined
Mix in the flour and the walnuts (or other add-ins if you are using them) and mix it ONLY until it is combined- carefully not over-mixing it
Pour the mixture into the greased bread pan
Bake for about an hour
Allow to cool before taking out of the pan
How to make the glaze:
Put all ingredients into a small bowl
Mix well with a spoon until well-combined and completely smooth
Drizzle it over the bread and enjoy the sweetness
3. Eggless chocolate doughnuts
Let's get really honest here, is there really any breakfast that is as good as a breakfast of chocolate donuts paired with coffee or chocolate milk? Or maybe you are hitting a mid-week slump and you just need a little something extra that is sweet and just makes you smile. These eggless chocolate doughnuts are a perfect way to start the day or even get you over the hump so you can finish your day with a smile! They are baked so you do not have to feel super guilty about eating one...or maybe more, and they are so easy that they can be a weekly staple in your house without the hassle!
Ingredients for doughnuts:
1 1/2 cups of all purpose flour
2 tablespoons of all-purpose flour (this is divided and separate from the other flour)
1/2 cups of unsweetened cocoa powder
1/4 teaspoons of baking soda
3/4 cups of sugar
3 teaspoons of baking powder
A hefty pinch of salt
1 1/2 cups of milk
1 tablespoon of apple cider vinegar
1/4 cup of plain yogurt
3 tablespoons of vegetable oil
1 teaspoon of pure vanilla extract
2 cups of chocolate glaze (this is optional)
Rainbow sprinkles (or any color) to decorate- this is also optional
Ingredients for the chocolate glaze:
1/2 cup of unsalted butter
1/4 cup of milk
1 tablespoon of corn syrup
2 teaspoons of vanilla extract
4 ounces of semi-sweet chocolate chips
1 3/4 cups of sifted powdered sugar
How to make the doughnuts:
Preheat your oven to 350 degrees and spray a doughnut baking sheet with non-stick spray
In a medium mixing bowl, combine the flour, sugar, cocoa, baking soda, baking powder, and salt
In another medium bowl, mix together the milk, vinegar, yogurt, oil, and vanilla
Grab your bowl of wet ingredients and add it to the dry ingredients. Mix these together until the ingredients are just combined. Do not over-mix this stuff!
Once your batter is combined, spoon it into the baking pans, filling each spot about 3/4 of the way up
Bake for 10-12 minutes or until you can poke a doughnut with a toothpick and it comes out clean
Let them cool in the pan
Once cooled, dip into chocolate glaze and top with as many sprinkles as your heart desires
How to make the chocolate glaze:
In a small saucepan, pour in the butter, milk, corn syrup and vanilla
Put these over medium heat and stir occasionally
Once this mixture comes to a boil, remove from heat immediately and add in the chocolate morsels
Mix until the chocolate is completely melted
Add i the powdered sugar and mix it in quickly and vigorously until it is completely smooth
4. Eggless chocolate brownies
You may think that not being able to have eggs means that you cannot enjoy the sweet chocolatey goodness of brownies anymore. Thankfully, there is an amazing brownie recipe that does not call for eggs so that you can still satisfy your chocolate cravings and live a life with as many delicious brownies as you can handle.

12 tablespoons of melted unsalted butter
2 1/2 cups of sugar
2 tablespoons of vegetable oil
1 cup of plain yogurt (full fat is best as it helps keep the brownies moist and dense)
1 teaspoon of vanilla extract
1 cup of cocoa powder
2 cups of self-rising flour
1/2 teaspoon of baking soda
1 cup of buttermilk
1 teaspoon of apple cider vinegar
How to make the fudge brownies:
Preheat your oven to 350 degrees, line a 9 x 13 inch baking pan with parchment paper, and spray with non-stick cooking spray
In large microwave-safe bowl, put in your butter and sugar. Microwave the sugar and butter for 30 seconds, remove and whisk. Repeat 2-3 times until it is completely melted and glossy. Set mixture aside to cool
Once slightly cooled, add in the oil, vanilla, and yogurt. Mix well until it is fully incorporated.
Add in the cocoa powder and mix until well combined
Add 1 cup of flour and baking soda. Mix until combined
Add buttermilk and vinegar, only stir until JUST combined
Add the rest of the flour and mix until it is just combined
Do NOT over-mix the batter or it will be runny and not rise properly
Pour the mixture into your prepared pan and smooth with a spatula until even
Bake for 35-40 minutes
Allow it to cool until completely cooled off
